Since becoming a parent, weekday breakfasts have been the trickiest meals of all. They say breakfast is the most important meal of the day, but it’s also the earliest. I’m tired, the kids are hungry, and we have approximately 2.8 billion things to do before we can walk out the door for school at 8:15 AM. I don’t like to admit it, but I have been that mom that gives her kids a banana in the car on the way to school and calls it good.
And on top of the early hour and busy schedule, my kids don’t love any of the standard easy breakfast options like scrambled eggs or oatmeal. I’ve tried many variations on the breakfast classics, but to no avail. So it’s early, we’re in a hurry, and I have to be creative? It just doesn’t work out very often.
But that’s where these breakfast parfaits swoop in and save the morning. Tah dah!
If eating a healthy breakfast can improve concentration, performance, and brain function, then as a mom, it’s imperative I solve our breakfast dilemma. These Chai Spiced Yogurt Parfaits with Apricots are my favorite breakfast solution. They’re healthy, with nutritious fruit, high protein yogurt, and whole grains in the form of granola (I’ve got to sneak that oatmeal in there somewhere) and they are so quick and easy! The chai flavored spices are my creative addition to this super simple breakfast and it is mighty tasty – just ask my kids!
To make it even more simple and ensure that I always have fruit to make this breakfast happen, I rely on the Libby’s canned fruit I can keep in my pantry. I always know I can count on Libby’s to deliver high quality canned fruit. The Libby’s Apricot Halves are the best of canned fruit. They taste fresh, firm, and juicy and are the perfect addition to a good yogurt parfait. Keeping breakfast simple and easy is the best way I know how to make it happen all five weekday mornings.
But while these breakfast parfaits are the very definition of easy, they are pretty enough to stand in for even the most special breakfast and brunch occasions. To make them more special, top them with lightly sweetened whip cream. If it’s just an ordinary Tuesday morning, skip the whip cream and just enjoy an extra sprinkle of crunchy granola on top.
And, I know from experience that they make a portable breakfast too – just make them in a mason jar and you can hand them out in the car on the way to school if you’re mornings are anything like mine.

- 1½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ⅛ teaspoon ground cloves
- ½ teaspoon ground cardamom
- ½ teaspoon ground ginger
- ¼ teaspoon ground allspice
- 2 cups vanilla Greek style yogurt
- 1 cup granola cereal
- 1 banana, sliced
- 1 15 oz. can of Libby’s® Apricot Halves, drained
- Whip Cream, optional
- Combine the spices and the yogurt. Stir to mix well.
- Sprinkle a layer of granola in the bottom of a small jar or cup. Layer with a large scoop of yogurt, followed by sliced bananas and apricot halves.
- Repeat the process if desired. Optional, top with whipped cream and/or a sprinkle of granola.
