If you have just 20 minutes, you can have a delicious, Healthy Beef Stir Fry on the table for dinner tonight. This will go down as one of the best back pocket dinner recipes.
Let’s be realistic for a minute here. There are “easy recipes” and meals touted as “easy dinners” or even “quick recipes,” but sometimes making dinner at all just isn’t easy.
I know I am a food blogger and I’ve made it a personal mission of sorts to help people cook and get family dinners on the table. Still, I’d be lying if I told you that we always have the dinner thing handled here. Not quite. We eat popcorn and toast for dinner here too, I promise.
I read this article, “The Myth of ‘Easy’ Cooking,” in The Atlantic last month and I have to agree that really, a lot of cooking just isn’t easy, no matter what the headlines tell you. Getting dinner on the table, a dinner that is healthy and uses real food ingredients, takes effort, thought, planning, and that thing we just never have enough of – TIME. There’s no getting around it.
And yet, I’m here today with another recipe claiming to be quick and yes, even easy. But, since I sense there are some who will roll their eyes, let me qualify that just a little:
This recipe will take some time, but less time than it will take to pack your family into the car and drive to a restaurant, order, and wait for food to arrive. In fact, it probably takes about a similar amount of time to make this Healthy Beef Stir Fry as it would to unwrap that frozen pizza and wait for it to cook, and this will taste infinitely better and cost far less than takeout.
I also have found that the first time you make a new recipe it takes a little bit longer than the second, third, and fourth time. This particular recipe is one that I’ve designated a “back pocket” recipe, i.e. I’ve made it so many times now that I don’t have to look at a recipe or even think about the preparation at all – it really just comes together in a few minutes.
So, when I say easy, be advised that I don’t mean effortless. It’s true that I can’t just snap my fingers and produce a good, healthy meal, but honestly, this is about the next best thing.
